Cheesemaking - Making your own cheeses at home

Course covers the following

Hygiene and sanitation

Pasteurisation of milk

Use of rennet and curd set

Types of starter cultures

Preparation of starter cultures
Lactic acid bacteria and moulds used in cheesemaking

Equipment used for small-scale home cheesemaking

Maturation of cheeses

Production of the following cheeses:
Camembert
Quark or cream cheese
Sour cream or marscapone
ricotta

Date: Saturday 25th September

Venue: EIT kitchen

Tutor : Dr Cryn Russell

Cost: $75 per person or $65 per person if you register with a friend
